This Valentine’s Day, show your love for yourself, your loved ones, and the next generation by preparing an easy and delicious plant-based dessert! This month, we feature a scrumptious “Whole Lotta Love” parfait that can be whipped up easily, made with a decadent Vanilla Cashew Cream and delicious Drunken Berries or Roasted Strawberries.
As a gift to our wonderful readers, we have also made two mini-cooking videos to show you how easy these are.
The yummy Vanilla Cashew Cream featured this month enables cooks to mimic the richness of dairy, without sacrificing flavour or taste. It’s a gamechanger. Be sure to use raw nuts, and soak/rinse them for creaminess and easier digestibility. As a bonus, you’ll find this recipe very filling due to its fibre, protein, and healthy mono and poly-unsaturated fats. If you’re strapped for time, simply use the cream as a fruit dip paired with a colourful fruit tray and some dark chocolate pieces. Vanilla and chocolate together can’t be beat. It will be a feast for the eyes as well as the heart!
