A love letter from ESRAG’s Plant-Rich Diet Task Force

We call her Mother Earth and she is our life support system. But our eating habits are stressing her to the point of collapse. This Valentine’s Day let’s show her a little love by leaving unsustainable animal products off of our plates. According to the T. Colin Campbell Center for Nutrition Studies, each day a person eats a plant-based diet, they save:

  • 1100 gallons of freshwater (used to water animals and their feed crops)
  • 45 pounds of grain (fed to animals instead of humans)
  • 30 sq. ft. of pristine forest (that would otherwise be cleared for grazing and feed crops)
  • 20 pounds of CO2 (from going into the atmosphere)
  • 1 animal’s life
